Cheryl's Chili


Ingredients:
>4 slices bacon
>1 lb. ground sirloin
>1 lb. ground sausage
>2 cans stewed tomatoes
>2 cans chili beans
>1 medium onion, chopped
>1 bulb garlic, minced
>2 Tablespoons extra virgin olive oil
>1-2 beers
>1-2 Tablespoons Old Bay Seasoning
>2 dried bay leaves
>1 teaspoon dried mustard
>1 tbsp chili powder
>1 tbsp hot sauce
>1 tsp crushed red pepper flakes
>salt & pepper to taste
Directions:
Chop bacon and cook in a skillet until crisp. Transfer to a paper towel lined plate to drain. Add the sirloin and sausage to bacon grease and cook over medium heat, breaking the meat into small crumbs.
In a small saucepan, heat extra virgin olive oil and saute the onion and garlic until the onion is tender.
In a food processor, puree the tomatoes and chili beans together. Add chili bean/tomato mixture to the browned meat mixture in skillet, stir to combine and add the onions/garlic mixture as well as the bacon. Add the beer slowly and allow it to cook off a little. Add seasonings to pot.
Cook chili about 45 minutes to an hour on the stovetop OR you can transfer it to a crockpot set on HIGH and cook for an hour and a half.
Cheryl's Tip: If chili seems runny, mix about 1 tsp cornstarch to 1/2 cup water and add to chili 1/2 hour before its done.

Taco Casserole


Ingredients:
>1 lb. ground sirloin
>1 sack cheese Doritos
>1 can Rotel
>1 envelope Taco Seasoning mix
>2 cups shredded cheddar cheese
>2 cans cream of chicken soup

Directions:
Crush your Dorito chips and place them in the bottom of a 13x9 inch casserole dish (you may not use all the Doritos in the sack, probably only 1/2 to 3/4) Brown the meat in a skillet, drain and season with salt, pepper and the Taco Seasoning. Layer the meat over the chips in the casserole dish.

In the same skillet you used for your meat, combine the cream of chicken soups and the rotel. Heat until just bubbly and then pour over the meat in the casserole dish.

Top the entire casserole with the cheddar cheese and place in a preheated 350 degree oven for about 10-15 minutes, until the cheese is nice and melted.

Serve by itself or with some spanish rice!

Stuffed Green Bell Peppers




Ingredients:
*6-8 Green Bell Peppers
*1 (8oz) can tomato sauce
*1 onion, chopped
*1 lb. hamburger meat
*1 Tbsp. Worchestershire Sauce
*1 box Uncle Ben's Roasted Garlic Wild Rice
*Salt & Pepper to taste


Directions:
1)Preheat oven to 350 degrees F.
2)Start the Wild Rice according to pkg directions.


3) In a skillet on the stovetop, brown hamburger meat with chopped onions. Salt & pepper to taste. I like to add a shake or two of crushed red pepper flakes as well.


4) While meat is browning, and rice is cooking, prepare the peppers. Carefully slice off the tops of each pepper, and discard the inside membranes and seeds. Set in a baking pan. Drizzle each pepper insides with a little olive oil. Salt & Pepper each.



5) Once the meat is brown and the onions tender, add the tomato sauce, Worchestershire and rice. Combine well and let simmer for about 5 minutes.


6) Fill each pepper with the hamburger/rice mixture until it has all been used up.


7) Bake for 15-20 minutes in your preheated oven until peppers are tender.



Serves 6-7
